Dandelion Margarita  kills two birds with one stone.

Nothing says summer like dandelions and margaritas. Yes. Dandelions. Those annoying weeds that pop up in your lawn are super tasty and super healthy! Throw some dandelion greens in your salad, on your burger or in your…. Margarita. You can’t be good all the time.

Dandelion

This weed-like superfood is a diuretic that helps the kidneys clear out waste, salt, and excess water. This inhibits microbial growth in the urinary system too. Dandelion has been shown to improve liver function by removing toxins and reestablishing hydration and electrolyte balance. Every part of the dandelion plant is rich in antioxidants that prevent free-radical damage to cells and DNA, slowing down the aging process in our cells. 

Please note that in the very first sentence, I point out that dandelion is a diuretic. I did not process that information the very first time I happened to read it and was very surprised when I kept having to pee! Dandelion greens are great after a night of too much sushi or anytime you want to get rid of a little extra water in your system…

Lime

We all know that lemons/limes are great sources of Vitamin C- but the peel contains compounds that have documented anti-cancer properties. A lemon or lime may not be what you would choose for an afternoon snack, but utilizing a powerful blender makes this an easy, tasty way to improve your health!

Dandelion Margarita

8 oz Margarita Mix

3 oz tequila

1/4 organic lime with peel

1 cup organic dandelion greens

2 cups ice

A small amount of sweetener may be added if desired, anything from agave to xylitol (my personal favorite). The one that’s in your house right now? Yeah. That’s the right one.

Here is a more natural variation, shown “virgin” as more of a lime sorbet. An adult kick works quite nicely with this recipe.

Daiquiri Ice

1/2 orange without peel

1/4 lemon with peel

1/4 lime with peel

handful of spinach leaves or dandelion greens

2 oz agave or desired sweetener

2 1/2 -3 cups ice
